What is the difference between all purpose flour and whloe wheat white?
I purchased whole wheat unbleached white flour and my wife had a fit. She said I should have gotten all purpose flour. Whats the difference? She does the baking, while I use it more for thickening and roux. Does it really matter?
White whole wheat tends to have a bit more minerals in it, and a higher protein level than standard AP flour. This means that in a standard baking recipe, the resulting crumb will be a bit drier and coarser. It can be mixed with AP flour at a 3:1 or even 2:1 ratio without any major changes in the end product while still obtaining some of the benefits of whole wheat. And while the wheat used for these products is white wheat rather than the standard red wheat, there is a darker color to products made with white whole wheat vs AP.
If she's planning to make more delicate products (pie crust, angel food cake) or items where visual appearance is important (white bread, light colored cakes) then you may want to go get her some AP flour. If you've still got AP flour around the house, she can cut in the whole wheat at the ratios listed above (start with 3:1) and see how the results suit her.
